(Naturally) Yellow Popcorn–the works!

Kids love the popcorn’s bright, yellow color–which happens to be a natural consequence of a great anti-inflammatory. But this delicious, simple snack is not only limited to children–this little twist in popcorn is to be enjoyed by everyone. If you haven’t guessed the secret ingredient behind the yellow glow, then I’ll let you in on this one: Turmeric (Curcumin), which has long been hailed in the East for its extremely potent (yet safe) anti-inflammatory and immune-boosting properties. Among the benefits are its ability to aid digestion, cancer prevention, heart protection, improved liver function, and even prevention against Alzheimer’s disease. Turmeric also serves as a great antioxidant,which neutralizes free-radicals that damage healthy cells.

Another great thing about this 5-minute snack is that it’s a great way to add some more whole grains to your diet (remember, corn is a grain after all!). Plus, you can enjoy about 4 cups of crunchy goodness for less than 100 calories. And if you add a bit of nutritional yeast (brewer’s yeast) to it, you give the snack a good shot of B-complex vitamins.

To make this super-healthy popcorn, all you need is the following:

– Popcorn kernels

– canola (rapeseed) or sesame oil

– a few pinches of turmeric

– A pinch of nutritional yeast (optional)

-salt, to taste

I have not indicated the amount for each ingredient, as it depends on whether you want to make a small batch or a big one. But for those making larger portions of popcorn, make sure the kernels in the pot make only one layer so you don’t end up with too many unpopped ones.

Grease the pot with oil, and then cover them with the layer of popcorn kernels. then, sprinkle as much turmeric as you want (just one or 2 good pinches will give the batch the bright yellow color). Cover the pot over high heat, and wait 5 minutes or so until the popping ends.

After placing the yellow popcorn in a bowl, sprinkle some salt and nutritional yeast (for a “cheese-like” taste, and some extra B-vitamins).
