This little darling threw a party and forgot to invite the eggs, milk, butter, and sugar.
And it had a blast.
When you try this, you can never guess the main ingredient of this rich, ultra-velvety chocolate mousse.
Creating this dessert was so much fun–it was, in fact, a pure serendipity. And actually, I owe the whole idea to my chocolate-loving husband. I was minding my own business, baking a few sweet potatoes before deciding on what to cook with them. However, right before I came up with the final decision to go for a sweet potato casserole, my husband casually suggests adding in a few dark chocolate nibs and watching them melt away into the hot potatoes. I thought he was joking at first, but the idea started growing on me a few seconds later, and I realized that it was worth experimenting a new chocolate mousse recipe together.
And. it. was. worth. every. second. spent.
And voila, all of a sudden, this sweet potato-based chocolate mousse became an instant favorite, ranking higher than my previous chocolate-peanut butter mousse recipe.
And come to think of it, the sweet potatoes and walnuts in this mousse make it a highly nutritious, low gi dessert!
Tip: You can add a little bit of raspberry sauce, and enjoy a really heavenly experience!
All you need is the following (makes 8 small shot-cups):
4-5 small sweet potatoes, baked and mashed
1/3 cup plain, unsweetened cocoa
85 grams dark chocolate pieces (around 2 small chocolate bars, or 2-3 handfuls of semi-sweet chocolate nibs)
1 tablespoon sucanat, muscovado, or any other pure, non-refined sugar
A small hanful of walnuts or hazelnuts (or a mixture of both)
A pinch of sea salt
Method:
All you have to do is mix all the ingredients together in the food proessor for about 2-3 minutes. Scoop them into dessert shot-cups, and feel free to to grate a few shavings of dark chocolate on it too!
